Inverted sugar is made through the process of inversion, where sucrose is converted into a combination of fructose and dextrose. Freshvert Sugar has different characteristics than other sugars, with a lighter flavor and resulting in increased moisture retention, enhanced shelf life, improved crust color and better solubility.
