Black Walnut Pumpkin Quick Bread1 ¾ cup canned pumpkin2/3 cup butter, unsalted, melted2/3 cup water4 eggs, whole, beaten3 ½ cups flour, all-purpose, sifted3 cups sugar, granulated, pure cane2 tsp. baking soda2 tsp. baking powder2 tsp. pumpkin pie spice½ tsp. salt1 cup Black WalnutsDirections:Preheat oven to 350 degrees. Combine pumpkin, water, butter, and eggs. Sift together flour, sugar, baking soda, baking powder, spices, and salt. Fold dry ingredients into pumpkin mixture, adding Black Walnuts toward the end of incorporation.Divide batter into 2 standard 1-lb. bread pans or pan of choice (e.g., Bundt, muffin or cake pans).Bake at 350°F for 24 to 30 minutes. Cover with foil if loaves are browning too quickly against doneness. Bake until toothpick or skewer comes out clean.
