Granulated tapioca consists of small, starchy granules commonly used to make tapioca pudding and to thicken pie fillings, soups, gravies, and stews. The granules don’t fully dissolve during cooking, so dishes thickened with tapioca have a lightly textured consistency with tiny, visible tapioca pearls. Instant granulated tapioca holds up well to prolonged cooking and freezing and adds an appealing glossy finish to fillings.
