Lancaster County Sweet Bologna Seasoning:

5 lbs Beef
1.10 lbs Lancaster County Sweet Bologna Seasoning
0.012 lbs Pink Cure (or 0.025 lb Veg-a-cure)

Coarse grind the meat, add the seasoning, mix
thoroughly until the meat feels tacky.
Regrind at 3/16 (or finer), stuff tightly
into casing & tie off.
Smoke/cook until fully cooked (150 degrees).
Cool quickly.
